Egg and cress sandwiches



It sounds obvious but a perfect egg can be hard, or not...
Put the egg in Cold water bring it up to the boil, once boiling leave it for 3 minutes then remove (this should give you soft eggs~). Peal the egg add 1 spoon of mayo for every two eggs and mash. Add the cress

Tiny Little Goats Cheese Tarts




For my tarts I’m going to use a basic short crust pastry recipe, pretty hard to go wrong but you can use ready roll. 
All you have to do is combine
  • 200g / 7 oz plain flour or all purpose flour
  • Pinch of salt
  • 110g / 4 oz butter, cubed or an equal mix of butter and lard
  • 2-3 tbsp very cold water

Roll and cut to fit muffin tins

Cook off/caramelise, some red onion with a little sugar and balsamic vinegar
Then put a spoon of onion and  a slice of goats cheese in each tart then bake at about 180°C for 15-20minutes

Victoria Sponge

    Ingredients  

  • 225g caster sugar, plus a little extra for dusting the finished cake
  • 225g self-raising flour
  • 2 tsp baking powder
  • 225g/ soft butter at room temperature, plus a little extra to grease the tins
  • 4 free-range eggs
  1. Wisk together eggs and butter, add sugar once combined
  2. Add the other ingredients. 
  3. Pour into 8” tin and bake 25minutes at 180°c
  4. Once cooled cut in half and add the filling.
  5. For the filling spread a good quality strawberry jam the bottom followed by a mixture of 300g of cream 1 teaspoon of vanilla and two table spoons of sugar whisked until stiff
